🤩 SHREDDED CHICKEN TACOS WITH MANGO SALSA 🤩
For the last month, my whole feed has been filled with recipes for Christmas cookies, hot cocoa bombs, and holiday drinks, but all I could think about was making tacos 🌮
🐔 SHREDDED CHICKEN 🐔
Ingredients – olive oil, 5-6 chicken thighs, 2 chopped tomatoes, 2 cloves minced garlic, 1/2 chopped onion, 1/2 lemon, salt, pepper, cumin, red chili flakes, 3-4 bay leaves, cilantro (optional)
1️⃣ Heat oil on a large pan over medium heat and fry onions and garlic for about 3 mins.
2️⃣ Add in chopped tomatoes and season with salt, pepper, cumin. Mix well and add in bay leaves. Let simmer for 3 mins.
3️⃣ Add chicken to the pan, season more, and squeeze juice from half of a lemon overtop. Cover with lid and let simmer for 6-8 mins.
4️⃣ Flip chicken and let simmer for 6-8 more mins.
5️⃣ Once chicken is fully cooked, take it out of the pan, shred with forks, and add it back into the tomato mixture. Top with cilantro if you want.
6️⃣ Serve in taco or bowl form!
🥭 MANGO SALSA 🥭
Ingredients – 1 mango, 1/2 can of corn, 1/2 purple onion, cilantro, 1 small tomato, 1/2 lemon or lime, salt, pepper
1️⃣ Finely chop mango, purple onion, cilantro, and tomato
2️⃣ Mix all ingredients together and season with lemon juice, salt, and pepper
3️⃣ Serve on top of chicken tacos or eat by itself!
