🥣 SALSA CHICKEN BREAKFAST BOWL 🥣 The other night I made a huge pot of salsa chicken to use in burrito bowls, and I knew right away that I’d be using the leftovers for breakfast the next morning because it was THAT good 🤤 Keep reading for the chicken recipe AND the leftover chicken recipe. 2 recipes, I know! I’m feeling generous today!! 😌

🍗 CHICKEN RECIPE 🍗
(4-6 servings)

Ingredients:
– About 2 lbs chicken – I prefer using thighs
– 1 pack casasanchezfoods green roasted salsa verde
– Olive oil + salt/pepper

Recipe:
Heat a generous drizzle of olive oil in a pot or deep pan. One the oil is heated, place your chicken on the pan, and season it with salt and pepper. Let it fry on each side for 3-5 minutes or until it gets crispy and golden. Add in a container of salsa verde and let it simmer for 10-15 minutes. One the chicken is fully cooked, take it out of the pan, shred it with forks, and add it back into the salsa mixture.

🍳 BREAKFAST SCRAMBLE 🍳

Ingredients:
– leftover chicken
– chopped onion, bell pepper, and jalapeño
– cherry tomatoes
– 1-2 eggs
– cilantro
– casasanchezfoods Totopos for serving

Recipe:
Heat oil in a pan. Pan fry onion and peppers for 3-4 mins. Add leftover chicken and cherry tomatoes and cook for 3 more mins. Push all ingredients to the side of the pan and scramble an egg on the other side. Once egg is cooked, mix everything together and serve with some chips and cilantro 🌱
