✨QUINOA BOWLS✨ Quinoa serves as a great high protein & high fiber base for food bowls 🥣 I love making a huge pot of it and using it for different types of meals throughout the week! This is a Mediterranean inspired bowl – here’s how to make it!
– oil or butter of choice
– minced garlic
– purple onion
– fresh dill, cilantro, or parsley
– boiled eggs (optional)
1️⃣ Pan fry finely chopped onion & minced garlic for 1-2 mins.
2️⃣ Add cooked quinoa to pan and season with salt + cracked black pepper + turmeric + coriander. Cook for 3-5 mins and set aside when finished.
3️⃣ For the tomato salad, roughly chop tomatoes and purple onion, drizzle with olive oil, and season with salt + pepper + fresh dill.
4️⃣ Chop cucumbers and boiled eggs to use as toppings.
5️⃣ Once everything is ready, assemble bowls and enjoy!
