🥕 OVEN ROASTED CARROTS 🥕
Before I get into recipe details, can we talk about how freaking PRETTY all these colors are 😍 Don’t be surprised if I suddenly start topping all of my bowls with pomegranate seeds and parsley🌱 These carrots are perfect to serve as an appetizer, a fancy snack, or a side dish to accompany any dinner spread🍴Let’s make them!
🥕 Carrot Ingredients:
– a bunch of colorful carrots
– olive oil
– honey or maple syrup
– salt & pepper
– 1 cup Greek yogurt
– juice from 1/2 lemon
– hot sauce (i used sietefoods habanero)
– maple syrup or honey
🌱 Topping Ingredients:
– feta cheese
– pomegranate seeds
– parsley or dill
1️⃣ Preheat oven to 400F. Wash carrots and line them up on a baking sheet lined with foil or parchment paper.
2️⃣ Drizzle carrots generously with olive oil and a bit of honey or maple syrup. Season with salt + pepper.
3️⃣ Place into oven and cook for 20-25 minutes until they are golden brown.
4️⃣ While they are baking, whisk together all of the sauce ingredients well. Add a dash of hot sauce & maple syrup, and adjust flavors as needed.
5️⃣ Once the carrots are ready, it’s time to plate! Start with a layer of yogurt sauce, top with roasted carrots, and sprinkle with crumbled feta, pom seeds, and finely chopped parsley! Enjoy 😊
