I’ve never met a Shakshuka I didn’t like 😋 A lot of Shakshuka recipes call for canned tomatoes or tomato paste, but I normally just use whatever I already have in the fridge (AKA regular tomatoes) 🍅 This is definitely a recipe you can get creative with!
✨ INGREDIENTS ✨
– olive oil
– 4-5 medium tomatoes
– 1/2 large onion
– minced garlic or garlic powder
– 3-5 eggs
– 1/2 bell pepper (optional)
– red chili flakes (optional)
– salt + pepper + cumin
– fresh parsley, cilantro, or dill
✨ RECIPE ✨
1️⃣ Finely chop your onion and add it to an oiled pan on medium heat with minced garlic or garlic powder
2️⃣ Pan fry the onion and garlic mixture for about 3 minutes, and then add chopped tomatoes and chopped bell peppers (optional)
3️⃣ Add salt + pepper + cumin, and then let the tomato mixture simmer in a covered pan for about 5-8 minutes
4️⃣ Once the tomato mixture looks similar to the way it does in this picture, make a few small “holes” in it to make space for the eggs
5️⃣ Carefully crack an egg into each “hole” and cover the pan to let them cook for about 5-8 mins (depending on how runny you want your yolks)
** Make sure to keep a close eye on the eggs so you don’t accidentally overcook them **
6️⃣ Take the pan off of the heat and top with more salt + pepper, fresh herbs, chili flakes, and avocado or feta cheese if you want to spice it up a little more 😎
7️⃣ Serve on toast or eat straight from the pan 🍳
