🤩 Crispy tofu, stir fried veggies, and quinoa – what could be better? 🤩 I finally jumped on the air fryer train, and I can confidentially say that it’s a life changer 🙌🏼 Tofu has always been a hassle for me to make because it never gets to the consistency I want, but now I have nothing to worry about! Recipe below ⬇️⬇️⬇️

CRISPY TOFU:
1️⃣ Drain and cut tofu
2️⃣ Evenly coat with a generous drizzle of olive oil and coconut aminos or soy sauce
3️⃣ Season with salt, pepper, cumin, and ginger powder
4️⃣ Air fry at 375F for 12-15 mins giving it a shake about halfway

VEGGIE STIR FRY:
1️⃣ Roughly chop carrots, onion, zucchini
2️⃣ Heat oil in a pan and pan fry carrots for about 5 minutes, flipping halfway
3️⃣ Add onions and cook for about 2 mins
4️⃣ Add zucchini, soy sauce, and sweet chili sauce and cook for 3-4 more mins
5️⃣ Add 2-3 handfuls of chopped kale and cook for 2 more mins
